Ginger Roasted Pork Tenderloin

Recipe by Foley Family Table

Ingredients

  • 1.5 pound
    pork tenderloin
  • 1 tsp.
    kosher salt
  • 1 inch
    fresh ginger root grated
  • 1 tablespoon
    brown mustard
  • 1 tablespoon
    maple syrup

Cooking Directions

  1. Simmer all the sauce ingredients , minus the salt, on a low heat until begins to boil. Remove from heat.
  2. To make this ginger roasted pork tenderloin
  3. Rub the pork with the kosher salt and cover with a light coating of the sauce. shake off the extra. Pre heat a cast iron pan until very hot. Sear the pork in the cast iron pan until flipping until brown on all sides. Place in a roasting pan and cover with the remaining sauce. Cook at 425 degrees for 20 to 30 minutes or until the pork reaches 155 degrees. Remove from the oven and let it rest for 10 minutes. Slice and serve.
